SKINNY PANERA BAGELS (Cooking light recipe)






So here's the recipe! 


Ingredients:


2 cups of warm water
   (100-110 degrees)
1 teaspoon of active dry yeast
28.5 ounces of bread flour, divided
    (about 6 and 1/2 cups)
1 tablespoon barley malt syrup (Optional)
2 teaspoons kosher salt
cooking spray
12 cups of water
3/4 cup of sugar 


Directions:
1. Combine two cups of warm water and yeast in the bowl of a stand mixer fitted with a dough hook; let stand for five minutes or until bubbles form on the surface. Weigh or lightly spoon 28.13 ounces (about 6 1/4 cups) flour into dry measuring cups, leveling with a knife. Add flour, malt syrup, and kosher salt into the yeast mixture. Mix dough at low speed for 6 minutes. Turn dough out onto a floured surface. Knead for 2 minutes or until smooth and elastic; add remaining 1/4 cup flour, 1 tablespoon at a time, to prevent the dough from sticking to your hands. Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (ideally 85 degrees), free from drafts, for 30 minutes.


2. Turn dough out onto a lightly floured surface, and divide into 12 equal portions. Working with one portion at a time, shape each portion into a ball. Make a hole in the center with your index finger. Gently form a 1 1/2 inch hole. Place bagels on a baking sheet coated with cooking spray, or lined with parchment paper. Lightly coat bagels with cooking spray; cover with plastic wrap or a towel. Let rise 10 minutes. (Bagels only rise slightly.)


3. Preheat oven to 450 degrees.


4. Combine 12 cups water with 3/4 cup sugar in a dutch oven or deep pot, and bring to boil. Gently lower 3 bagels into pot. Cook for 30 seconds. Transfer back to baking pan. Repeat with the remaining bagels, working in batches of three. (Make sure the bagels are on two pans, with 6 bagels on each.) Bake at 450 for 7 minutes. Rotate pans, and bake for an additional 7 minutes or until golden. (Careful-the bottoms burn quick!) Cool on wire racks or on a serving plate.
