Chocolate Chocolate Cookies



Chocolate Chocolate Cookies

Ingredients:
1/2 cup Shortening (Softened, if in stick form)
1/2 cup Butter (1 stick, softened)
3/4 cup Brown Sugar, packed tightly 
1 cup Granulated Sugar
2 Eggs, at room temperature
2 1/2 teaspoons Vanilla Extract
2 cups All-Purpose Flour (I like unbleached kind)
2/3 cup Unsweetened Cocoa Powder
3/4 teaspoon Baking Soda
1/4 teaspoon Kosher or Table Salt
1 1/4 cups Chocolate Chips or White chocolate chips


Method:
1. Preheat oven to 350 degrees.

2. In a medium bowl, mix flour, Cocoa Powder, Baking Soda, and salt.

3. Beat the first four ingredients together into a smooth consistency. Add eggs one at a time until mixed completely. Mix in Vanilla. Add in a small amount of the dry mix into the wet mix. Turn on mixer slowly to combine. Repeat until all flour is mixed in. Stir in chocolate Chips.

4.  Spoon dollops of dough onto nonstick cookie sheets. (You can also use wax paper, parchment paper, or cooking spray.) Bake for 10 minutes, or until center is just slightly gooey.


This recipe is altered slightly from Judy and Benji (BenjiManV, ItsJudysLife, ItsJudyTime.) I found them a little bit bitter to my taste. I hope you enjoy.
