Lemon Meringue Cupcakes:
Vanilla cake:
1 1/4 cups All- Purpose flour
1 1/2 tsp Baking Powder
1/4 tsp Salt
1 Stick Butter (Softened)
1 cup Sugar
Vanilla Extract
Lemon Filling:
1 cup Sweetened Condensed milk
1/4 cup Lemon Juice
Meringue:
4 Egg Whites
1/3- 1/2 cup Caster Sugar (Regular also works fine)
Method:
Preheat oven to 400 degrees.
Cream Sugar with Butter. Add eggs in one at a time. Add Vanilla. Add dry ingredients slowly. Pour into lined or sprayed pans. (I used an Ice Cream Scoop.)
Bake for 20 minutes, or until a toothpick inserted comes out clean.
Remove centers of cupcakes. Fill with desired amount of Lemon Filling.
Whip egg whites until stiff. Slowly add in sugar. OPTIONAL** Place in a piping bag**
Cover tops of cupcakes completely, place in oven and bake until meringue is golden brown.
Serve warm and enjoy!! Sorry the blogs are so late today. I wasn't feeling to great.
